Wine name: SOFFIO
in the hills of the municipality of Attimis at 200 m. above sea level.
Type of wine: Dry white.
Soil: Flysch of the Eocene epoch with a prevalence of sandstone.
Growing system: Guyot.
Harvest: Early September (first ten days of the month). The grapes are hand harvested, selected and separeted into crates.
Vinification: Maceration of Chardonnay and Sauvignon grapes for 12 hours at 4°C followed by soft pressing.
Enhancement: Slow fermentation in stainless steel vats at a temperature not higher than 16°C for 4 months.
Once bottled the wine is left to mature for 2 months before sale.
Alcohol content: 13 % vol.
Total acidity: 5,20 gr/l
Organoleptic Characteristics: Deep straw yellow colour. Rich and fruity bouquet.
The taste is delicate with a complex texture.
Conservation: Keep in a cool, dark place.
Serving temperature: 8-10° C
Bottle: 750 ml
Food combinations: To be combined with fish dishes, shellfish and soups. It is the perfect wine to serve as an aperitif with friends.
